Description

Flavor: Fish maw has a unique, savory aroma with a smooth texture. After long simmering, it becomes even more tender and absorbs the broth, resulting in a richer taste and mouthfeel.

Uses: Fish maw is versatile and can be used in various culinary methods such as making soups, nourishing stews, porridge, or dumplings. Its high collagen content makes it an ideal choice for health and wellness, adding unique flavor and nutrition to a wide range of dishes.


Fish Maw Preparation Method

For thinner fish maw, it is recommended to dry steam it for 10 to 30 minutes before further processing (the exact time depends on the size of the fish maw). This step helps maintain its elasticity and resilience, reducing the risk of over-softening during subsequent soaking.

After dry steaming, the fish maw becomes more pliable and achieves better rehydration. Once dry steaming is complete, soak the fish maw in clean water and store it in the refrigerator overnight. The next day, boil a pot of water with ginger and scallions, place the fish maw in the boiling water, cover with a lid, and let it boil on high heat for about 3 minutes. Then, turn off the heat and let it sit (simmer) overnight before it’s ready to use.
